We know by now that healthy food isn’t boring. Its colourful, exciting, and texturally pleasing. But how about decadent? Is decadent health an oxymoron? I certainly hope not or I’ve been doing this all wrong.
This morning I was feeling a combination of lazy and inspired….health nut and sweet tooth. Drab and fabulous. Decisions decisions… someone just make me breakfast please? Yeah not happening. And so it began. A monstrous oat bowl that puts all of your pancake fantasies in the safety of one bowl; minus the flipping and frying (which honestly isn’t that hard but sometimes your just not feelin it)
This isn’t so much of a recipe as of a little dreamy inspo for your future oat endeavors. But seriously, make it tomorrow.
Here she goes!
deconstructed blueberry pancake oat recipe (serves 1 happy person)
- 1/2 cup large flake oats
- 1/2 cup plant milk
- more water if needed
- pinch salt
- pinch cinnamon
- 1 medium banana sliced length-wise
- tbsp. peanut butter
- tsp. maple syrup
- 1/2 cup fresh or frozen blueberries (raspberry would be delicious too)
- tsp. orange juice
Prepare Oats: in a small pot on medium, combine oats, plant milk, cinnamon, and salt. Once it reaches a boil, cover and simmer on low for 13-15 minutes until at desired consistency.

Blueberry Orange Sauce: in a small sauce pan on medium, add 1/2 cup fresh or frozen blueberries with teaspoon orange juice and a pinch of maple syrup if desired. Allow blueberries to break down for 4-5 minutes and then set aside.
Fried Banana: Drop half a teaspoon of coconut oil in a small frying pan on medium high. Sprinkle slice of banana with cinnamon and drop into pan. Cook, flipping after 4-5 minutes, until golden brown and crispy on both sides! Set aside.
Maple-Peanut butter Sauce: simply whisk heaping tablespoon of peanutbutter with teaspoon of maple syrup. If chunky, thin out with a pinch of plant milk. Warm in a microwave or small sauce pan.
